Egg Bites

My wife calls them 'Eggies' to piss me off. Don't call them that. They are Sous Vide Egg Bites. Ya gotta have a pressure cooker, and this bad-boy (I say get the double one, because I've never not made two trays of them). These are not only fantastic, but one of the few foods I'll reheat in the most dreaded of all kitchen appliances. . . the microwave. Very healthy, too! Low carb, high protein, good reheated. . . it's like me. The total package.



Ingredients (this recipe size is for one 7ct tray of the above linked)

These two are your base:

4 Eggs

1/2 cup cottage cheese


Then, get weird with it. Add anything you want!

Bacon bits/cheddar

Diced Ham/cheddar

Pepperjack/diced chilis

Pepperoni/Mozzarella

Broccoli/cheddar

Mushroom/swiss

Tomato/basil

No really, whatever the fuck you want! You just need a little, up to 1/2 cup cheese, and typically no more than two tablespoons of your veggie/protein.


I throw the eggs & cottage cheese in my ninja, blend that shit up, go a little longer, really whip those eggs into shape. Spray your egg cups with cooking spray, then pour evenly into the tray cups, then I like to add tiny cubes (not pubes) of cheese & whatever else I'm doing. I've added everything then ninja'ed it before, but I prefer the chunks of ham & cheddar. It's prettier, too.


Once your tray is ready, put the lid on it, or if your asshole-midgets took the lid out & used it as a frisbee and the dog gnawed it up, just use the heavy duty foil (WHAT? You don't get heavy duty? You cheap fuck. Get the heavy).


Put about a cup of water in your pressure cooker, and the wire-rack it should have came with. Get your egg tray in there, careful, that shit's full. Put the cooker on steam setting for 10min. I usually like to set a timer for 25min as soon as it starts, because after 10min under pressure, leave it to naturally depressurize for 10 additional minutes, then yank it out.


Take the lid/foil off, put a plate on top. Holding the tray to the plate, flip that bitch. BOOM. Egg bites.
